Today was a very productive day. The girls finished all of their schoolwork, I cleaned and did laundry and dh, against my will mowed the back yard and did some mud work in the bathroom. And last night he was out practicing his golf swing and trying to teach the girls how to do it. There are golf balls all over the back yard.
I went to pick up a few things last night at the grocery store, cabbage to be exact. Could you believe my suprise that after buying two heads of cabbage I get home and find out that I already had two in the fridge. They were hidding. Oh well, we will be having a lot of cabbage this week.

Cole slaw.
This is my favorite cabbage recipe…. actually my only cabbage recipe.
Old-Fashioned Beef Stew
1 boneless chuck roast (about 2 lbs), cut into 1/2 inch cubes
1 tbsp cooking oil
1 large onion
4 cups of water
1 tsp seasoning salt
1/2 tsp pepper
2 to 3 tsp of salt (4 for doubling)
5 to 6 medium potatoes, peeled and cubed
5 medium carrots, peeled and sliced
1 medium rutabaga, peeled and cubed
1 cup celery, sliced
1/2 medium head of cabbage, shredded
1/2 c cold water
Several tbsp cornstarch (2 to 3)
2 tsp browning sauce
In a Dutch oven over medium high heat, brown the meat in oil. Add onion, water seasoning salt, pepper and salt. Bring to a boil. Reduce heat, cover and simmer for 2 hours. Add vegetables; cover and simmer for 30 minutes or until vegetables are tender. Stir in browning sauce. Combine cold water and corn starch. Stir into stew and bring to a boil, stirring constantly. Boil for 1 minute to thicken. Additional water and cornstarch can be used to reach desired thickness.
I always double this recipe…. Doubling everything but the meat…. No one will notice!
I know this is more of a winter recipe, but we loved to take it camping. I would make it ahead of time, barely cooking the vegetables, but completing the thickening process. I would freeze it in family size portions. On our trip, I would defrost and cook over the open fire….. It’s a welcomed meal after a day of hiking or hanging out…..mmmmm.

Sounds like a great day if you leave out the cabbage – not a fan here unless finely cut up in a salad.
